Family-run since 1933, our brasserie in Hyeres offers a warm atmosphere combined with rustic charm. Traditional French and local cuisine based on market returns.

Le Guillaume Tell is a traditional French brasserie. The lights come on at 6:30 for the first coffee-croissant, followed by the morning's cold drink, a quick lunch on the go, then the afternoon drinks, concluding with an aperitif on the terrace, dinner on the bench, with a mix of grands crus or small bottles from the latest small producer. The lights go out at midnight with the last cocktail.

Right in the heart of Hyeroy's hustle and bustle, Le Guillaume Tell remains the town's oldest brasserie, open since 1933 and updated in 2022 to bring out its early 20th-century columns and period marble. Large banquettes await you as you indulge in our chef Caroline's cuisine, featuring seasonal produce, charcuterie from Boucherie Dupuy à la Gare, seasonal sandwiches and sweet treats. The à la carte menu is always accompanied by several suggestions depending on the market, and every lunchtime, Caroline prepares a different dish of the day.

Le Guillaume Tell is open Monday to Saturday from 6.30am to midnight. On Sundays, the brasserie is closed.

Le Guillaume Tell is the perfect place to stop after a stroll through the city center, discovering the art trail in the heart of the old town, the Villa Noailles and the Musée de la Banque.

À la rencontre de...

Our generation is in the sustainable development approach. We have this awareness, so favoring local products is natural, as is applying for the Esprit Parc National brand, because it's in our state of mind.

When they took over the management of their grandfather's hotel in 2012, Benjamin and Damien Piffet were respectively 29 and 26 years old... and already quite a bit of travel.

After studying business and finance, Benjamin traveled and worked in Spain, Germany, England and Brazil. After several internships, he became a pastry chef. Business school also for Damien, who continued his studies in Finland before leaving to work in Hong Kong and Australia.

We grew up here, we are very attached to the territory. Leaving allowed us to realize how lucky we are and the quality of life here. So we took over from our parents.

Each of us has a role to play: Damien is in charge of communication, administration, reception, and supervision of the teams in the rooms. Benjamin supervises the five restaurants.

Their ambition?

We have already created three prototype rooms with the designer Jean Colonna. We met him through the Villa Noailles, which is part of the hotel's history, as our mother has supported the art and design center since its creation.

Le Provençal is also the official hotel of the International Fashion and Photography Festival.

The two brothers are keen to consolidate their local roots: they organize jazz aperitifs open to the public every Thursday evening in July and August, "we have approached local fishermen and market gardeners to work with them, we welcome trainees, we run workshops at the Giens elementary school..."
