Le Subvers prepares healthy, varied dishes with passion and love. Fast food, market cuisine, 100% local, quality products.
The story begins here with homemade bread and organic, inventive, 100% local, short-run cuisine. A unique know-how to sublimate and revisit the traditional salad and the classic sandwich: our specialty the Subvers. As well as gourmet delights, the pleasure of tasting and sharing Lauzes cheese and charcuterie, drinks, desserts and homemade ice creams.
With a magnificent view of the Rochefort in the heart of old Florac, on the shady terrace, we'll be happy to share our passion for cooking, as well as the unique taste of Subvers, in a warm and friendly atmosphere.
And because the simplest things are the best, Camille and Mickaël bake their bread every day using local flour from the Causse Méjean... Bread is the cornerstone of their concept, and you'll be able to enjoy it in every proposal.

Le Subvers isn't just a restaurant, it's an experience of sharing and conviviality in the heart of old Florac, in a charming and peaceful setting.
Meat and fish, eggs, vegetables and fruit, dairy products, beverages and even flour are all sourced locally, within a 30 km radius. Camille and Mickaël work with producers whose values they share: respect for the environment, sustainable or organic farming.
A question of values, then, but also a question of taste and respect for you.
On Sundays, from 10 a.m. to 1 p.m., you can enjoy a sweet or savory brunch, according to your tastes, by reservation only and no later than the day before.
