Every year, Olivier takes his herds of cows to the Lucharry and Salistre mountain pastures in Etsaut for five months.
It produces veal in boxes, minced steaks and prepared dishes such as veal axoa, bolognaise or navarin de mouton.
The minced steak comes from a whole cow when it's a Montbéliarde or a Béarnaise.
For Blondes d'Aquitaine, once a year, in 10kg packs, rib steaks and bourguignon are transformed into minced steaks to accompany grilled cuts.
The pieces of meat are vacuum-packed, labeled and presented in cardboard boxes
